🐟 Sri Lankan Umbalakada Sambol Recipe
Ingredients:

Maldive fish (umbalakada) – ½ cup (pounded or crushed)

Red onions / shallots – 6 to 8, finely chopped

Green chilies – 2, chopped

Red chili powder – 1 tbsp
-
Lime juice – 1½ tbsp
-
Salt – to taste

A small piece of pandan leaf (optional, for aroma)
Method:
Step 1 — Prepare the Maldive Fish

Lightly dry roast the Maldive fish in a pan for 1-2 minutes until aromatic.

Pound it using a mortar & pestle or grind coarsely.
Step 2 — Mix the Sambol

In a bowl, add:

Maldive fish
-
Chopped onions
-
Green chilies
-
Red chili powder
-
Salt
-
-
Gently mix well using your fingers to release the flavors.
Step 3 — Add Lime Juice

Finally, add lime juice and mix again.

Taste and adjust salt or chili if needed.

Best served with hot rice and curry.

Perfect with kiribath (milk rice), string hoppers, or hoppers.
