🐟 Sri Lankan Umbalakada Sambol Recipe





Ingredients:

  • Maldive fish (umbalakada) – ½ cup (pounded or crushed)

  • Red onions / shallots – 6 to 8, finely chopped

  • Green chilies – 2, chopped

  • Red chili powder – 1 tbsp

  • Lime juice – 1½ tbsp

  • Salt – to taste

  • A small piece of pandan leaf (optional, for aroma)


Method:

Step 1 — Prepare the Maldive Fish

  1. Lightly dry roast the Maldive fish in a pan for 1-2 minutes until aromatic.

  2. Pound it using a mortar & pestle or grind coarsely.

Step 2 — Mix the Sambol

  1. In a bowl, add:

    • Maldive fish

    • Chopped onions

    • Green chilies

    • Red chili powder

    • Salt

  2. Gently mix well using your fingers to release the flavors.

Step 3 — Add Lime Juice

  1. Finally, add lime juice and mix again.

  2. Taste and adjust salt or chili if needed.


Serving Suggestions 🍛

  • Best served with hot rice and curry.

  • Perfect with kiribath (milk rice), string hoppers, or hoppers.

  • Can also be eaten with roti or bread.
